Garlic Shrimp Meal Prep Bowl with Cilantro Lime Rice
This is a super quick and easy meeal prep option that I keep in my rotation and never get tired of!
Ingredients:
Approx 24 large Uncooked Shrimp
1T Olive oil
2 Garlic CLoves
1T Lime juice
Box Zatarains Cilantro Lime Rice
1c. Cherry Tomatoes ( halved)
1 Jalepeno Pepper ( seeded and sliced)
Fresh cilantro
Lime slices
Salt and pepper to taste
Instructions:
Prepare rice according to package and set aside. In medium skillet healt oil until simmering, add garlic and saute.
Add shrimp i a single layer, sprinkle with salt and pepper. Cook for approximately 3-4 minutes until opaque and cooked through.
Remove shrimp from heat and set aside.
Divide rice among 4 containers, add garlic shrimp, tomatoes, jalepeno. Sprinkle with lime juice and fresh cilantro.
Can be served hot or cold.
